Cardinal Perch (Epigonus crassicaudatus), is caught in very deep waters along the Continental Shelf in Chile. The extreme depths (at approximately 450 fathoms) at which these fish are caught have excluded a large part of the Chilean fishing trawlers from exploiting it. Cardinal Perch first gained popularity amongst European buyers became interested in its superior eating quality. Top Seafood began offering this product in the United States in 1998. Cardinal Perch is an excellent alternative to Ocean Perch, it is not oily thereby offering better taste, and it is an excellent value.

Cardinal Perch Fillets have a sweet flavor, white color with good flaking characteristics.

Cardinal Perch Fillets weigh from 2 to 4 oz. Fillets are Deep skinned, Boneless and Individually Quick Frozen (IQF).

Cardinal Perch Fillets are offered both for the retail trade and for foodservice applications. Foodservice packs include a 2/10 lb. or 1/10 lb.case bearing the Frosty Pack and the Toppskip Brand labels.

Cardinal Perch Fillets are processed in a modern, state of the art facility under the HACCP regulations and following the Good Manufacturing Practice (GMP) system.
