Emerald Perch is a freshwater fish that has a firm texture and white, flaky meat. As a butterfly skin-on fillet, this is an ideal product for pan frying, deep frying, fish & chips or grilling. Emerald Perch is a relatively small fish, whose habitat is the clean, clear water of European estuaries, rivers and lakes. Emerald Perch has a distinct yellowish skin color and features pronounced dark striping. Emerald Perch is packed 1x10lbs, IQF butterflied fillets. Fillet sizes fall between 20 and 40 grams each.This is the most popular size for Perch type fish fry, and it is often the most difficult fillet size to source. Pikeperch is a freshwater lake favorite, just like its cousin, the Walleye. It has firm, white, flaky meat and is one of the best eating freshwater species. It is moderate in size and thrives in clear, deep, fresh waters. Pikeperch skin is pinkish in color, with dark striping. Pikeperch fillets are packed skin-on and individually quick frozen to lock in freshness. Slight water glazing is applied to prevent dehydration until the Pikeperch is ready for cooking. IQF fillets are size graded and bulk packed in poly lined and sealed 10 lbs. corrugated cartons that can be reclosed, for maximum convenience of use. Pikeperch size grading is 2-4oz., 4-6oz., 6-8oz., 8-10oz., 10-12oz. and occasionally over 12oz. From time to time, we can offer skinless fillets, and fillet sections that are naturally cut from larger fillets in such a way that they resemble the fillet shape of smaller fillets. Pikeperch are iced immediately upon capture and then rushed to modern freezing plants that work under strict HACCP guidelines, for filleting and freezing.
